A core of grapefruit and peach, lees and gun-flinty mineral laden soil flavours. Fine fruit tannins and delicate mealy seamless mouthfeel. A fantastic expression that doesn’t need oak to show its purity and innocence. Best drinking from 2022 through 2028+.

Tasting Note:

Lifted aromas with grapefruit, stone fruit, oatmeal, and cashew nut. Unfolds with hints of citrus zest, seashell minerals and a creamy underlay. The palate is concentrated with great depth and creamy textural richness. Great length with lacy acidity and a hint of chalky tannins on the finish.

Winemaking: Hand-picked Hawke’s Bay Mendoza Chardonnay was whole bunch pressed, with only free run juice progressing to ferment in two concrete egg fermenters. Egg shaped fermenters keep yeast lees in suspension through the naturally occurring convection currents unique to the egg shape. The eggshape also enlarges the contact area of the yeast. The 7cm thick concrete shell effectively stores heat, which is then released during malo-lactic fermentation and aging. Minimally handled through to bottling.
